For the filling:

2 legs of mutton
½ kilo of Balantinos tyromalama
½ kilo of Balantinos pichtogalo
Mint
Salt
Pepper

For the pastry-sheet:

A cup of 250gr. of Balantinos sheep’s yogurt
Oil (as much as the yogurt cup)
Flour (as much as needed-about 1 kilo)
2 eggs
Juice of 2 lemons

Delicious Meat Pie

Filling:

Cut the meat into small portions and put it in a stewpot. Cover it with water and boil until it softens. Let the meat cool, pluck it and put it in a bowl.

Pastry-sheet:

Put about half a kilo of flour in a pan, make a hollow at the centre and add the eggs, yogurt, oil and lemon juice and mix well. Add the rest of the flour little by little continually working on the mixture until it forms into dough that can roll into pastry. Oil a glass baking pan, roll out a pastry-sheet with the half of the dough and lay it at the bottom of the pan. Spread a layer of the meat (about half of it) over the sheet. Spread a layer of pichtogalo mingled with tyromalama, chopped mint and the rest of the meat and cover with a sheet rolled out with the rest of the dough.

Covering:

Oil the sheet using a little brush and sprinkle sesame over its surface. Bake in a pre-heated oven at 200 degrees.
