Tyromalama is a fresh cheese which is produced by pasteurized sheep and goat’s milk. It is a traditional Chanian product and it is used exclusively in cooking. It is an unsalted cheese with a neutral taste and forms the basic ingredient in traditional Cretan “kaltsounia” (kind of Cretan dessert).
