Raw materials

shepardlittle The raw materials we process in our plant consist of 100% fresh sheep and goat’s milk. This milk comes solely from selected farms which are located in the massif of the prefectures of Chania and Rethymno.


little14Milk is collected and placed in special freezing tanks immediately after milking and it is transported to our factory in special milk-wagons within a few hours, so that the temperature and quality of milk’s components are maintained steady and unchanged.

Production of goods

6littleThe production of our goods is based on the excellent combination of the traditional recipe we inherited by our ancestors with the modern technology required by the contemporary developments.

Our privately-owned plant lies in Varypetro in the prefecture of Therissos, a few miles away from the centre of Chania. This is the location where all the productive operations, storage rooms and offices of the business are situated.



Milk is gathered from the collaborating farms and is brought to our plant, where it undergoes quality control and is subsequently pasteurized for the procedure of cheese-making to begin. Fresh products, such as sheep’s yogurt, sweet cream cheese (anthotyros), cream cheese (myzithra) and other are driven to refrigerators for immediate distribution to customers, while cheese products, like Gruyere (graviera) and “kefalotyri” (kind of hard cheese) are kept to ripen and are then stored in our fridges until they are sold.
